What is Nitriding?
Nitrided carbon steel is heat-treated with nitrogen to harden the surface, making it more durable, rust-resistant, and a little less sticky in the beginning compared to plain carbon steel. It also gives it its dark appearance. Nitriding is not a coating; it’s a transformation of the steel’s surface by diffusing nitrogen into the steel.
Just like traditional carbon steel, it will still build seasoning over time and become increasingly stick-resistant as you cook. Nitriding doesn’t make it “super nonstick” right out of the box, but it does make those first few cooks a little easier.

What Does “GEN 2” Mean?
The GEN 2 on our Nitrided Series indicates that this product mirrors the updates made to our Classic Carbon Clad® Frying Pans.
GEN 2 introduces a few small refinements to the original Carbon Clad® design. We’ve adjusted the layer thicknesses, size, and shape to improve overall performance. The pans are now 3 mm thick instead of 2.8 mm, adding only a few ounces of weight while delivering higher performance.
It’s still the same lightweight, responsive Carbon Clad® construction, thoughtfully refined using everything we’ve learned from the original design.



































Reviews
Since I have only had my pan set a month now I can’t speak to long term use on these. However in the month I have had these they are amazing so far. I have owned other Nitrated pans and Strata stands out for sure. They actually take seasoning beautifully vs the others that get sticky as you season and you need to keep them super clean for mediocre non stick performance. These heat super evenly as well thanks to the nice thick aluminum core. 10/10 so far these are my daily drivers.
Recently made the transition from Scanpan non-stick to Strata nitrided series 2 and couldn’t be happier! They took seasoning well and I love not having to worry much about rusting. And they look and feel very premium and are comfortable to work with.
Friendly tips… Don’t go too hot when cooking eggs. Just preheat for maybe 2 minutes on medium to medium low. And use a bit of butter to eliminate sticking, not oil. I also highly recommend getting a Nogent “fish spatula” to use with these pans.
