I had an 8.5” pan delivered a week ago and I’m already a convert. I’ve only owned cast iron pans and stainless pots prior - never even tried a carbon or stainless frying pan before. I seasoned it twice per the instructions using grapeseed oil and immediately went to town. I’ve fried many eggs, made a couple omelets, seared a steak, cooked salmon filets & chicken thighs. The pan is non-stick at this point and very smooth despite it changing appearance. Absolutely love it.
This is my go-to now. Lightweight, easy to season, excellent heat distribution, it’s perfect for cooking for 1-2.
This is the easiest, tastiest skillet to cook from of the comparable size and quality skillets I own. I’m really impressed!
My husband will try out the larger one because he does larger batch cooking. He’s out of town but is in for a treat. It too is lighter than our other skillets of the same size. The handle has a nice ergonomic feel and shape to it for my hand too.
I pre-ordered the 12" pan, bought a 10" for a Christmas present, an 8", and finally a 10". I really like these pans. They have become my Go-To pans. I like the fact that they dissipate the heat more evenly throughout the pan. I cook on induction and my Matfer has hot spots over the coils. The only downside I see to these pans is that they don't retain the heat well. Since weight isn't an issue for me, it would be a perfect pan if it had more mass to hold the heat if that's possible.
I use only stainless steel, carbon steel and enameled cast iron in my kitchen (no PTFE). One very common drawback of carbon steel pans heating unevenly is not an issue here since they have aluminum and stainless steel clads underneath. This also makes the pans much lighter than regular carbon steel pans. Just after one layer of seasoning; fried eggs, omelettes and crepes move around easily. The handle stays comfortably cool and ergonomically easy to hold. Best purchase in years for my kitchen.
I love it for eggs. Small and easy to use, doesn't take up much space.
