A carbon steel cooking surface can take some getting used to if you're new to it. Rest assured, we provide an easy-start guide as well as a detailed carbon steel manual with everything you need to know. Patience is key - It takes time and cooking in order build peak high preforming stick-resistance.

    This is the way

    I had an 8.5” pan delivered a week ago and I’m already a convert. I’ve only owned cast iron pans and stainless pots prior - never even tried a carbon or stainless frying pan before. I seasoned it twice per the instructions using grapeseed oil and immediately went to town. I’ve fried many eggs, made a couple omelets, seared a steak, cooked salmon filets & chicken thighs. The pan is non-stick at this point and very smooth despite it changing appearance. Absolutely love it.

    Great Purchase

    Followed the instructions for seasoning & care and watched a couple of YouTube videos. My 8.5" pan works beautifully. Cooking over medium eggs in it works perfect–slick as a whistle!

    Must Have

    This is my go-to now. Lightweight, easy to season, excellent heat distribution, it’s perfect for cooking for 1-2.


    This is the easiest, tastiest skillet to cook from of the comparable size and quality skillets I own. I’m really impressed!


    My husband will try out the larger one because he does larger batch cooking. He’s out of town but is in for a treat. It too is lighter than our other skillets of the same size. The handle has a nice ergonomic feel and shape to it for my hand too.

    Became my Go-To pans

    I pre-ordered the 12" pan, bought a 10" for a Christmas present, an 8", and finally a 10". I really like these pans. They have become my Go-To pans. I like the fact that they dissipate the heat more evenly throughout the pan. I cook on induction and my Matfer has hot spots over the coils. The only downside I see to these pans is that they don't retain the heat well. Since weight isn't an issue for me, it would be a perfect pan if it had more mass to hold the heat if that's possible.

    Very good pan; balance is slightly off

    I like the pan. It is beautiful, lightweight and works well so far in my initial cooks. My only quibble is that I think my pan is a little too handle heavy. On my gas burner it stays mostly flat but on my Breville induction cooktop it leans slightly back and is not stable on the surface. This is probably due to a combination of it's light weight and the temperature sensor on the cooktop that protrudes up a bit, but it is slightly frustrating. Not really Strata's fault, just my observation.
