A carbon steel cooking surface can take some getting used to if you're new to it. Rest assured, we provide an easy-start guide as well as a detailed carbon steel manual with everything you need to know. Patience is key - It takes time and cooking in order build peak high preforming stick-resistance.

Great performance! LIGHTWEIGHT! Quickly became non-stick. Easy to season. The handle is comfortable, not hot. Quick heat up. I have the kickstarter 10.5”. Had I known how great this pan was, I would have bought all 3 sizes. I still love my Stargazer & Lodge cast iron, Demeyere ProLine and deBuyer carbon steel but my Strata pan moved to the top ! Oven seasoned with Crisco, perfectly! I have spent this year updating my cookware mostly with G5, after receiving the 10.5 Strata I love it so much I might replace my 12” G5 with the 12” Strata! Only reason for 4 stars is the handle seems a little cheap and maybe even a little crooked.
I love how quickly it gets hot, how even the temperature is across the pan, how responsive it is to increase/decrease in flame, how the handle stays cool, and how lightweight it is.

Wife and kids use it too. Wife uses Strata more than any other pan, kids use Strata and non-stick. Both kids and wife will avoid heavier pans.
Got the pan for Christmas. Oven seasoned 2x and started cooking. Eggs, pancakes, burgers… all came out great. Eggs and pancakes didn’t stick and burgers formed an even, terrific crust. Easy cleanup. I dry on stovetop and add a bit of grape seed oil, wipe and store.
This is my second Strata pan and I must say this pan has renewed my excitement in cooking again. After years of cooking with cheap teflon pans, I’m excited to cook again!
