Reviews
I use only stainless steel, carbon steel and enameled cast iron in my kitchen (no PTFE). One very common drawback of carbon steel pans heating unevenly is not an issue here since they have aluminum and stainless steel clads underneath. This also makes the pans much lighter than regular carbon steel pans. Just after one layer of seasoning; fried eggs, omelettes and crepes move around easily. The handle stays comfortably cool and ergonomically easy to hold. Best purchase in years for my kitchen.
I’ve been using the Strata pans for a few weeks and they’ve already taken over as my go-to. They’re lightweight, easy to season, and perform great — eggs, bacon, panko chicken, no problem. The handle stays cool, which is a huge plus. I’m not sure they’ll outlast the more typical pans from the legacy brands, but I’ll take the wrist-friendly handling and mobility any day.
I am quite happy that they came up with this clad set. The lighter weight makes them easier to handle on the cook top. Got them seasoned using the oven and the first egg test (fried 2 together in the smaller pan) did wonderfully. Already cooked up steak, pork chops and breakfast sausage in the other two and nothing stuck and a quick deglaze with water cleaned them well enough that a light scrub took care of the rest. If you are wondering - yes they are worht it.
I love my Strata carbon steel pans. They are much easier to handle than my cast iron or100% carbon steel pans because of the light weight.
